2 large ripe peaches (fresh or canned)
1 cup glutinous rice flour (mochiko)
¼ cup granulated sugar
1 cup water
Cornstarch (for dusting, as needed)
Score the bottom of each peach with a small cross and briefly blanch in boiling water (~1 minute), then plunge into cold water. Peel and halve the peaches.
In a microwave-safe bowl, whisk together rice flour, sugar, and water until smooth. Cover with a damp paper towel.
Microwave for 1 minute, stir, then repeat twice until dough becomes thick and sticky. Let cool 5–10 minutes. Alternatively, cook the mixture on the stovetop over medium heat, whisking constantly until thickened.
Dust a clean surface with cornstarch. Transfer dough, sprinkle cornstarch on top, and roll into a circle about 1/6 inch thick. Divide into four equal pieces.
