For the Chicken:
3–4 small boneless, skinless chicken breasts
2 tablespoons balsamic vinaigrette dressing
1/2 cup shredded mozzarella cheese
For the Bruschetta Topping:
1 large tomato, finely chopped
1/4 cup fresh basil, chopped
2 tablespoons balsamic vinaigrette dressing
For Serving:
Balsamic glaze (store-bought)
Marinate the Chicken:
Place the chicken breasts in a large resealable plastic bag.
Add 2 tablespoons of balsamic vinaigrette dressing to the bag.
Seal the bag and turn it over several times to evenly coat the chicken with the dressing.
Refrigerate for at least 10 minutes.
Prepare the Grill:
Preheat the grill to medium heat.
Grill the Chicken:
Remove the chicken from the marinade and discard the bag and dressing.
Place the chicken on the grill and cook for 6 minutes.
Flip the chicken over and grill for an additional 8 minutes, or until the internal temperature reaches 165°F (74°C).
During the last 2 minutes of grilling, sprinkle each chicken breast with shredded mozzarella cheese and allow it to melt.

While the chicken is grilling, combine the chopped tomato, chopped basil, and 2 tablespoons of balsamic vinaigrette dressing in a bowl.
Stir to combine and set aside.
