Coffee Sugar Cookies
1 cup (226 g) unsalted butter
1 Tbsp instant espresso powder
2½ cups (300 g) all‑purpose flour
2 tsp cornstarch
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
1½ cups (300 g) granulated sugar
1 large egg, room temperature
1 tsp vanilla extract
Espresso Mascarpone Frosting & Topping
8 oz mascarpone cheese, cold
1½ cups (180 g) powdered sugar
2 tsp instant espresso powder
1 tsp vanilla extract
1 cup (237 ml) cold heavy whipping cream
Cocoa powder, for dusting
Preheat oven to 375 °F (190 °C). Line baking sheets with parchment paper.
Melt butter, whisk in espresso powder, then chill mixture (~10 min) until cool.
In a bowl, whisk flour, cornstarch, baking powder, baking soda, and salt.
In another bowl, mix cooled espresso-butter with sugar until combined, then whisk in egg and vanilla. Add dry ingredients until just combined.
Scoop dough (2‑Tbsp each) about 3 in (8 cm) apart onto lined sheets. Bake 10–12 min until edges set and centers puffed. Cool on sheet 5 min before transferring to rack to room temperature.
For frosting: Beat mascarpone until smooth, add espresso powder, vanilla and powdered sugar. Slowly incorporate whipping cream; then increase mixer speed to medium until frosting is light and fluffy (~2–3 min).
Once cookies are completely cooled, top each with 1–2 Tbsp of frosting. Smooth in a swirl with a spatula or spoon. Dust with cocoa powder just before serving.
