Ingredients:
1 cup old-fashioned rolled oats
2 cups milk (or your preferred milk alternative)
2 large eggs
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
Optional toppings: fresh fruit, nuts, cinnamon, maple syrup
Directions:
In a medium saucepan, combine oats and milk. Bring to a gentle simmer over medium heat, stirring occasionally.
In a separate bowl, whisk together eggs, sugar, vanilla extract, and salt until smooth.
Gradually add about 1/2 cup of the hot oat mixture to the egg mixture while whisking constantly to temper the eggs.
Pour the tempered egg mixture back into the saucepan with the oats, stirring continuously.
Cook over low heat for another 5-7 minutes, stirring frequently, until the oatmeal thickens and reaches a custard-like consistency. Do not boil to prevent curdling.
Remove from heat and let sit for a minute to thicken further. Serve warm with your favorite toppings.
