Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 cup fresh or frozen cranberries
1/2 cup orange juice (freshly squeezed preferred)
1/4 cup honey
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon dried thyme
Zest of 1 orange
1/4 cup chicken broth
Directions:
Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side, or until golden and cooked through. Remove chicken and set aside.
In the same skillet, add garlic and ginger; sauté for 1 minute until fragrant.
Add cranberries, orange juice, honey, thyme, orange zest, and chicken broth. Stir and bring to a simmer. Cook for 5-7 minutes, until cranberries burst and sauce thickens slightly.
Return chicken to the skillet, spooning sauce over the top. Cook for another 2 minutes to heat through and coat chicken with sauce.
Serve chicken topped with cranberry orange sauce.
