Ingredients:
4 salmon fillets (about 6 ounces each)
1 cup fresh pineapple chunks
2 tablespoons soy sauce
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1 tablespoon olive oil
Salt and pepper, to taste
Optional garnish: chopped green onions and sesame seeds
Directions:
Preheat oven to 400°F (200°C).
In a blender or food processor, combine pineapple chunks, soy sauce, honey, garlic, and ginger. Blend until smooth to create the pineapple glaze.
Place salmon fillets on a lined baking sheet. Brush the pineapple glaze generously over each fillet.
Drizzle olive oil over the salmon and season with salt and pepper.
