Shrimp Oreganata is a classic Italian-American seafood dish that showcases shrimp topped with a flavorful breadcrumb mixture, then baked to perfection. The combination of garlic, lemon, parsley, and white wine creates a savory and aromatic topping that complements the natural sweetness of the shrimp. Originating from the New York area, this dish is a staple in many Italian-American households and is especially popular during the Feast of the Seven Fishes on Christmas Eve. It's a versatile recipe that pairs wonderfully with pasta or crusty bread to soak up the delicious sauce.
Ingredients:
1½ pounds colossal shrimp, peeled and deveined
2 tablespoons fresh parsley, minced
6 cloves garlic, minced
⅓ cup plain breadcrumbs
1 tablespoon lemon juice
2 teaspoons dried oregano
½ teaspoon crushed red pepper flakes
½ teaspoon kosher salt
2 tablespoons grated Parmigiano Reggiano cheese
¾ cup low-sodium chicken stock
¼ cup dry white wine
6 tablespoons cold butter, cubed
2 tablespoons extra virgin olive oil
Directions:
Preheat Oven: Set your oven to 425°F (220°C), placing one rack in the middle and another near the top.
Prepare Breadcrumb Mixture: In a medium pan over medium-low heat, sauté the minced garlic in 3 tablespoons of olive oil until fragrant, about 2 minutes. Add the breadcrumbs, lemon juice, parsley, oregano, crushed red pepper flakes, salt, and grated Parmigiano Reggiano. Mix well and remove from heat.
Prepare Shrimp: Pat the shrimp dry with paper towels and season with salt and pepper. Arrange them in a single layer in an oven-safe baking dish, tails pointing up.
Assemble Dish: Top each shrimp with the breadcrumb mixture. Pour the chicken stock and white wine around the shrimp. Dot with cubed butter and drizzle with olive oil.
Bake: Place the dish in the oven and bake for 10 minutes, or until the shrimp are cooked through. Then, move the dish to the top rack and broil for 1-2 minutes, or until the breadcrumbs are golden brown.
Serve: Remove from the oven and serve immediately, garnished with lemon wedges and accompanied by crusty bread to soak up the delicious sauce.
