Blackberry Lime Cheesecake Cupcakes are a delightful treat that combines creamy cheesecake with the bright flavors of fresh blackberries and zesty lime. Ingredients:
For the Crust:
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons unsalted butter, melted
For the Cheesecake Filling:
16 ounces cream cheese, softened
¾ cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Zest of 1 lime
Juice of 1 lime
For the Topping:
1 cup fresh blackberries
2 tablespoons powdered sugar (optional)
Directions:
Preheat oven to 325°F (160°C). Line a 12-cup muffin pan with cupcake liners.
In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust.
In a large bowl, beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, lime zest, and lime juice.
Pour the cheesecake filling over the crusts in the cupcake liners, filling each about 3/4 full.
Bake for 18-22 minutes, or until the edges are set but the centers still jiggle slightly. Remove from oven and cool to room temperature, then refrigerate for at least 3 hours or overnight.
Before serving, top each cupcake with fresh blackberries and sprinkle with powdered sugar if desired.
