9 oz cheese tortellini (refrigerated, frozen, or dried)
1 lb ground beef (80/20 lean)
1 small onion, chopped
2 cloves garlic, minced
1 tablespoon chili powder
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 (10 oz) can enchilada sauce (red or green)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
¼ cup sour cream
Fresh cilantro, chopped (for garnish)
Cook the Tortellini: In a large pot, bring water to a boil and cook the tortellini according to the package instructions. Drain and set aside.
Brown the Beef: While the tortellini cooks, heat a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through. Drain any excess fat.
Sauté Onions and Garlic: Add the chopped onion and minced garlic to the skillet with the beef. Cook for 2–3 minutes until the onion is soft and translucent.
Add Spices: Stir in the chili powder, cumin, paprika, salt, and black pepper. Cook for 1 minute to toast the spices.
Combine with Enchilada Sauce: Pour in the enchilada sauce and bring the mixture to a simmer. Let it cook for 5 minutes to blend the flavors.
Add Tortellini: Add the cooked tortellini to the skillet, tossing to coat them in the sauce.
Melt the Cheese: Sprinkle the shredded mozzarella and cheddar cheeses over the top. Cover the skillet and cook on low for 2–3 minutes until the cheese is melted and bubbly.
Finish and Serve: Remove from heat and stir in the sour cream. Garnish with chopped fresh cilantro. Serve hot and enjoy!
