The Ground Beef and Potato Taco Bowl is a hearty and satisfying dish that combines the savory flavors of seasoned ground beef with tender, crispy potatoes. Ingredients:
1 pound ground beef
2 medium potatoes, diced
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
1/4 cup water
1 cup shredded cheddar cheese
1 cup cooked rice (optional)
Toppings: sour cream, diced tomatoes, sliced jalapeños, chopped cilantro, lime wedges
Directions:
Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook until tender and lightly crispy, about 10-12 minutes. Remove potatoes from skillet and set aside.
In the same skillet, add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat.
Add diced onion and minced garlic to the beef. Cook for 3-4 minutes until the onion is translucent.
Stir in taco seasoning and water. Cook for 2-3 minutes until the mixture thickens.
Return cooked potatoes to the skillet and mix well with the beef mixture.
Remove from heat and stir in shredded cheddar cheese until melted.
Serve the beef and potato mixture over cooked rice if desired, and top with sour cream, diced tomatoes, jalapeños, cilantro, and a squeeze of lime.
