Ingredients
For the Salad:
8 ounces rotini pasta (or other short pasta)
1 cup grape tomatoes, halved
1 cup cucumber, chopped
½ cup red bell pepper, diced
¼ cup red onion, diced
½ cup shredded cheddar cheese
¼ cup sliced black olives
For the Dressing:
½ cup olive oil
3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 teaspoon dried Italian seasoning
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
Directions
Cook the pasta according to package directions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
In a large bowl, combine the cooked pasta, grape tomatoes, cucumber, red bell pepper, red onion, shredded cheddar, and black olives.
In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper until well combined.
Pour the dressing over the pasta mixture and toss until everything is evenly coated.
Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
Toss again before serving and adjust seasoning if needed.
