8 slices bacon, diced
4 cups all-purpose flour
1 cup shredded extra‑sharp cheddar cheese
4 teaspoons baking powder
1½ teaspoons kosher salt
1 teaspoon baking soda
¾ cup unsalted butter, frozen and grated
1½ cups buttermilk
6 tablespoons maple syrup, divided
2 tablespoons melted unsalted butter (for brushing)
Preheat oven to 450 °F (230 °C) and line a baking sheet with parchment paper.
Cook bacon in a skillet over medium-high heat until crispy (about 6–8 minutes). Drain on paper towels.
In a large bowl, combine bacon, flour, cheddar, baking powder, salt, and baking soda.
Grate the frozen butter into the dry ingredients and stir gently to combine.
In a separate bowl, whisk together buttermilk and 4 tablespoons maple syrup. Add to dry mixture and stir until soft dough forms.
On a floured surface, knead dough gently 3–4 times. Roll out to roughly 1¼ in thick. Cut 12 rounds using a biscuit cutter (2–2½ in diameter). Freeze biscuits for 15 minutes.
Bake for 15–18 minutes, or until golden brown.
Combine remaining 2 tablespoons maple syrup with melted butter and brush over warm biscuits before serving.
