Especially lovely when made ahead for entertaining, these dainty sandwiches bring nostalgia and sophistication in every bite.
8 oz cream cheese, softened
3 Tbsp mayonnaise
2 tsp chopped fresh dill
1 tsp chopped fresh chives
¼ tsp garlic powder
Salt and freshly ground black pepper, to taste
1 English cucumber, thinly sliced
1 loaf white bread (crusts removed)
In a mixing bowl, beat cream cheese and mayonnaise until smooth. Stir in dill, chives, garlic powder, salt, and pepper.
Spread the herbed cream cheese mixture evenly onto one side of each slice of bread.
Layer thin slices of cucumber over half of the bread slices; drizzle or sprinkle a little extra herbs or pepper if desired.
Top with the remaining bread slices, cream cheese side down. Remove crusts if you haven’t already, then cut each sandwich into triangles, rectangles, or bite-sized pieces.
Serve immediately, or cover and refrigerate up to 24 hours. Make sure bread is fully coated with spread to prevent sogginess.
