Ingredients:
4 boneless, skinless chicken breasts
1 cup long-grain white rice
1 1/2 cups chicken broth
1/2 cup BBQ sauce
1/4 cup honey
1 tablespoon olive oil
1 tablespoon soy sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 375°F (190°C).
Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and smoked paprika.
Sear the chicken breasts in the skillet for 3-4 minutes per side, until golden brown. Remove the chicken and set aside.
In the same skillet, add rice, chicken broth, BBQ sauce, honey, and soy sauce. Stir to combine.
Place the chicken breasts back into the skillet, nestling them into the rice.
Cover the skillet and transfer it to the oven. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the rice is tender.
Remove from the oven, garnish with fresh parsley, and serve.
