Ingredients
2 chicken breasts, cubed
4–5 small to medium-sized potatoes, peeled and cubed
Olive oil
Salt and pepper
Garlic powder
Paprika
2 tablespoons butter
1/2 teaspoon each of salt and pepper
1 teaspoon each of paprika, onion powder, and Italian seasoning
2 tablespoons minced garlic
Buffalo Wild Wings Garlic Parmesan Sauce (or preferred brand)
1 cup shredded mozzarella cheese
Directions
Prepare the Potatoes: Wash, peel, and cube the potatoes. Toss them in olive oil, salt, pepper, garlic powder, and paprika.
Air Fry the Potatoes: Preheat the air fryer to 400°F. Place the seasoned potatoes in the air fryer basket in a single layer. Air fry for about 20 minutes, shaking the basket halfway through, until the potatoes are crispy and tender.
Cook the Chicken: While the potatoes are cooking, season the cubed chicken with salt, pepper, paprika, onion powder, and Italian seasoning.
Sauté the Chicken: In a skillet, melt butter over medium-high heat. Add the seasoned chicken and cook until it reaches an internal temperature of 165°F and is golden brown.
Add Garlic and Sauce: Add minced garlic to the skillet with the chicken and sauté for about 1 minute until fragrant. Pour in the Garlic Parmesan sauce and stir to coat the chicken evenly.
Combine Potatoes and Chicken: Once the potatoes are done, add them to the skillet with the chicken and sauce. Toss everything together to combine.
Add Cheese: Sprinkle shredded mozzarella cheese over the mixture. Cover the skillet with a lid and let it sit for a few minutes until the cheese melts, or place the skillet under a broiler for 2-3 minutes for a golden, bubbly top.
Serve: Garnish with fresh parsley if desired and serve hot.
