Coconut Caramel Flan is a luscious and creamy dessert that combines the silky texture of classic flan with the tropical richness of coconut. Ingredients:
For the Caramel:
1 cup granulated sugar
1/4 cup water
For the Flan:
1 can (14 ounces) sweetened condensed milk
1 can (13.5 ounces) coconut milk
4 large eggs
1 tablespoon vanilla extract
1/4 cup granulated sugar
Directions:
Preheat oven to 325°F (160°C).
In a saucepan over medium heat, combine sugar and water. Stir gently until sugar dissolves. Allow to cook without stirring until the mixture turns a deep amber color, about 8-10 minutes. Immediately pour caramel into a 9-inch round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.
In a large bowl, whisk together sweetened condensed milk, coconut milk, eggs, vanilla extract, and sugar until smooth.
Pour the custard mixture over the set caramel in the baking dish.
Place the baking dish inside a larger pan. Pour hot water into the larger pan to come halfway up the sides of the baking dish (water bath).
Bake for 50-60 minutes or until the flan is set but still slightly jiggly in the center.
Remove from oven and let cool to room temperature. Refrigerate for at least 4 hours or overnight.
To serve, run a knife around the edges of the flan, then invert onto a serving plate so the caramel sauce drips over the top.
