Mango Tres Leches
Mango Tres Leches is a tropical twist on the classic Latin American dessert, featuring a moist sponge cake soaked in a luscious three-milk mixture and topped with fresh, juicy mangoes. This rich and creamy dessert offers a perfect balance of sweetness and fruitiness, making it a refreshing and indulgent treat for any occasion. Ingredients:
For the Cake:
1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
5 large eggs, separated
1 cup granulated sugar, divided
1/3 cup whole milk
1 teaspoon vanilla extract
For the Tres Leches Mixture:
1 can (12 ounces) evaporated milk
1 can (14 ounces) sweetened condensed milk
1/2 cup whole milk
For the Topping:
1 1/2 cups fresh mango, diced
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat egg yolks with 3/4 cup sugar until pale and fluffy. Stir in milk and vanilla.
Gently fold the flour mixture into the egg yolk mixture.
In a separate bowl, beat egg whites until soft peaks form. Gradually add remaining sugar and beat until stiff peaks form.
Fold egg whites carefully into the batter until combined.
Pour batter into prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out clean.
Let cake cool completely.
In a bowl, whisk together evaporated milk, sweetened condensed milk, and whole milk.
Poke holes all over the cooled cake with a fork and slowly pour the milk mixture over the cake. Refrigerate for at least 4 hours or overnight.
To make the topping, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread whipped cream over the soaked cake and top with diced mango.
Serve chilled.
