This recipe features chicken simmered in a mixture of vinegar, soy sauce, garlic, and spices until tender, resulting in a rich and flavorful stew that’s perfect served with rice. Ingredients
3 pounds chicken thighs, bone-in and skin-on
1/2 cup soy sauce
1/2 cup white vinegar
6 cloves garlic, crushed
1 teaspoon whole black peppercorns
3 bay leaves
1 tablespoon brown sugar (optional)
1 cup water
2 tablespoons cooking oil
Salt and pepper, to taste
Directions
In a large bowl, combine the soy sauce, vinegar, garlic, peppercorns, bay leaves, and brown sugar. Add the chicken and marinate for at least 30 minutes, preferably 1 hour or more.
Heat the cooking oil in a large skillet or pot over medium heat. Remove the chicken from the marinade (reserve the marinade) and brown the chicken pieces on both sides until golden, about 5 minutes per side.
Pour the reserved marinade and water into the pot with the chicken. Bring to a boil, then reduce heat to low. Cover and simmer for 30 to 40 minutes, or until the chicken is cooked through and tender.
Remove the lid and continue simmering for another 10 minutes to reduce the sauce slightly. Season with salt and pepper to taste.
Serve hot with steamed rice.
