Ingredients:
2 large Japanese cucumbers (or English cucumbers), thinly sliced
2 tablespoons rice vinegar
1 tablespoon soy sauce
1 teaspoon sugar
1 teaspoon sesame oil
1 tablespoon toasted sesame seeds
Optional: pinch of salt
Optional: sliced green onions for garnish
Directions:
Thinly slice the cucumbers and place them in a bowl. If desired, sprinkle with a pinch of salt and let sit for 10 minutes to draw out excess moisture, then drain any liquid.
In a small bowl, whisk together rice vinegar, soy sauce, sugar, and sesame oil until the sugar dissolves.
