Ingredients:
For the Beef Kofta:
1½ pounds ground beef (80% lean/20% fat)
1 tablespoon Za'atar spice blend
1 teaspoon kosher salt
1 teaspoon ground black pepper
1 shallot, finely minced (about ⅓ cup)
2 tablespoons fresh Italian parsley or cilantro, chopped
2 garlic cloves, minced
1 egg, beaten
For the Garlic Yogurt Sauce:
1 cup plain Greek yogurt
1 tablespoon extra virgin olive oil
1 garlic clove, minced
1 tablespoon freshly squeezed lemon juice
½ teaspoon ground cumin
½ teaspoon kosher salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper (optional)
Directions:
Prepare the Garlic Yogurt Sauce:
In a small bowl, combine the Greek yogurt, olive oil, minced garlic, lemon juice, ground cumin, salt, black pepper, and cayenne pepper (if using). Stir until smooth and well combined. Cover and refrigerate until ready to serve.
Prepare the Beef Kofta:
In a large mixing bowl, combine the ground beef, Za'atar spice blend, salt, black pepper, minced shallot, chopped parsley or cilantro, minced garlic, and beaten egg. Mix until all ingredients are evenly incorporated.
Form the Kofta:
Divide the beef mixture into 12 equal portions. With wet hands, shape each portion into an oblong patty or mold them around skewers to form elongated kebabs.
Cook the Kofta:
Preheat a grill, grill pan, or skillet over medium-high heat. Lightly oil the cooking surface. Cook the kofta for 4–5 minutes per side, or until they are browned and cooked through, with an internal temperature of 160°F (71°C).
Serve:
Arrange the cooked kofta on a serving platter. Serve with the chilled garlic yogurt sauce on the side for dipping. Optionally, garnish with additional chopped herbs and serve with pita bread, rice, or a fresh salad.
