Ingredients:
8 oz (about 2 cups) pasta (fusilli, penne, or your choice)
2 cups fresh arugula
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup grated Parmesan cheese
2 tablespoons olive oil
Juice of 1 lemon
1 teaspoon lemon zest
Salt and black pepper, to taste
Optional: pine nuts or sunflower seeds for crunch
Directions:
Cook the pasta according to package instructions. Drain and rinse under cold water to cool it down quickly.
In a large bowl, combine the cooled pasta, arugula, cherry tomatoes, and red onion.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
Pour the dressing over the salad and toss gently until everything is well coated.
Sprinkle with grated Parmesan cheese and toss again lightly.
Optional: top with pine nuts or seeds for added texture.
Serve immediately or chill for 15–20 minutes for a colder, more refreshing flavor.
