Encased in a flaky pie crust, these hand pies are filled with a spiced mashed sweet potato mixture and fried to golden perfection. For the Filling:
2 cups mashed sweet potatoes (about 2 large sweet potatoes)
¼ cup light brown sugar
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
For the Hand Pies:
1 homemade pie crust recipe (or 2 boxes store-bought pie crusts)
Canola or vegetable oil, for frying
For the Glaze:
3 cups confectioners' sugar
6–9 tablespoons whole milk
Prepare the Filling: In a medium bowl, combine the mashed sweet potatoes, light brown sugar, ground cinnamon, and ground nutmeg. Stir until fully combined and set aside.
Roll Out the Pie Crust: On a lightly floured surface, roll out the pie crust to ⅛-inch thickness. Use a 4–5 inch round cookie cutter to cut the crust into circles. You should get 26–28 rounds if using homemade crust; the number may vary with store-bought crusts.
Assemble the Hand Pies: Place 1 tablespoon of the sweet potato filling onto the center of each pie crust round. Fold each round into a half-moon shape and use water to wet the edges to help seal each crust. Crimp the edges with a fork and set aside.
Heat the Oil: In a medium pot over medium heat, add 2–3 inches of oil. Heat the oil until it reaches a temperature of 375°F (190°C).
Fry the Hand Pies: Carefully place 2–3 hand pies into the hot oil. Fry until golden brown, about 2–3 minutes per side. Transfer the fried hand pies to a paper towel-lined baking sheet to drain excess oil
Prepare the Glaze: In a small bowl, whisk together the confectioners' sugar and 6 tablespoons of milk. Add more milk, 1 tablespoon at a time, until the glaze reaches a pourable consistency.i
Glaze the Hand Pies: While the hand pies are still warm, drizzle the glaze over each one.
