Traditionally served during cold seasons or when feeling under the weather, Avgolemono combines simple ingredients like chicken, rice, eggs, and fresh lemon juice to create a delicious and healing meal.
Ingredients:
6 cups chicken broth
1 cup cooked chicken, shredded
1/2 cup uncooked white rice
3 large eggs
1/4 cup fresh lemon juice (about 2 lemons)
Salt and pepper, to taste
Fresh dill or parsley for garnish (optional)
Directions:
In a large pot, bring chicken broth to a boil. Add the uncooked rice and reduce heat to a simmer. Cook until rice is tender, about 15-20 minutes.
Add shredded chicken to the pot and heat through.
In a medium bowl, whisk eggs and lemon juice together until smooth.
Slowly ladle about 1 cup of hot broth into the egg-lemon mixture while whisking constantly to temper the eggs and prevent curdling.
Gradually pour the tempered egg mixture back into the pot, stirring constantly.
Heat the soup gently over low heat, stirring until it thickens slightly, but do not boil.
Season with salt and pepper to taste.
Garnish with fresh dill or parsley if desired and serve warm.
