4 skinless, boneless salmon fillets (6 oz each)
1 tablespoon olive oil
2 cloves garlic, minced
4 cups fresh spinach
½ cup crumbled feta cheese
¼ cup roasted red peppers, chopped
Salt and freshly ground black pepper, to taste
Preheat the Oven: Preheat your oven to 375°F (190°C).
Prepare the Spinach Filling: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly. Once cooled, stir in crumbled feta cheese and chopped roasted red peppers. Season with salt and pepper to taste.
Prepare the Salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Using a sharp knife, carefully cut a slit along the side of each fillet to create a pocket for the stuffing.
Stuff the Salmon: Evenly divide the spinach and feta mixture among the salmon fillets, stuffing each pocket generously.
Bake the Salmon: Place the stuffed salmon fillets in the preheated oven and bake for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
Serve: Remove from the oven and let rest for a few minutes before serving. Enjoy your delicious and healthy stuffed salmon!
