Slow Cooker Swiss Steak is a hearty and comforting dish that transforms inexpensive cuts of beef into a tender, flavorful meal. This "dump-and-go" recipe requires minimal prep and no pre-cooking, making it ideal for busy weeknights or leisurely weekends. The slow cooker does all the work, melding the flavors of tomatoes, mushrooms, and bell peppers into a rich gravy that smothers the steak. Serve it over rice, mashed potatoes, or egg noodles for a satisfying meal.
3 lbs round steak, chuck steak, or blade steak (about 4–5 steaks)
1 (28 oz) can diced tomatoes
1½ tsp minced garlic
1 diced onion
1 (10 oz) can mushrooms (or fresh mushrooms)
1 whole green bell pepper, chopped
2 tbsp cornstarch
Water (for cornstarch slurry)
Prepare the Slow Cooker: Spray the inside of the slow cooker with non-stick cooking spray.
Layer the Ingredients: Place the steaks at the bottom of the slow cooker. Top with diced tomatoes, garlic, onion, mushrooms, and green bell pepper.
Cook: Cover and cook on low for 8 hours, or until the meat is tender.
Thicken the Sauce: In a small bowl, mix cornstarch with a little cold water to create a slurry. Stir this into the slow cooker. Cover and cook on high for an additional 20 minutes, or until the sauce thickens.
Serve: Serve the Swiss steak over rice, mashed potatoes, or egg noodles.
