Ingredients:
1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
2 tablespoons vegetable oil
1/2 cup creamy peanut butter
1/4 cup soy sauce
2 tablespoons honey or maple syrup
2 tablespoons lime juice
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/2 teaspoon red pepper flakes (optional)
1/4 cup water
Chopped peanuts and fresh cilantro, for garnish
Cooked rice or noodles, for serving
Directions:
Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
In the same skillet, combine peanut butter, soy sauce, honey, lime juice, garlic, ginger, red pepper flakes, and water. Stir and cook over medium heat until smooth and heated through.
Return the cooked chicken to the skillet and toss to coat in the peanut sauce. Cook for another 2-3 minutes to blend the flavors.
Serve the peanut chicken over cooked rice or noodles. Garnish with chopped peanuts and fresh cilantro.
