1.5 lbs boneless, skinless chicken breasts
1 cup freshly grated Parmesan cheese
8 oz cream cheese, cut into pieces
2 cups low-sodium chicken broth
3 teaspoons minced garlic
1 teaspoon garlic powder
12 oz penne pasta (or pasta of choice)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Red pepper flakes (optional, for a spicy kick)
Prepare the Slow Cooker: Place the chicken breasts at the bottom of the slow cooker.
Add Ingredients: Top the chicken with cream cheese, minced garlic, garlic powder, and grated Parmesan cheese. Pour the chicken broth over the top. Season with salt and pepper to taste.
Cook: Cover and cook on Low for 4½–5½ hours or on High for 2½–3½ hours, until the chicken is tender and easily shreds.
Shred Chicken: Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and stir to combine with the sauce.
Cook Pasta: While the chicken is cooking, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Combine Pasta and Sauce: Add the cooked pasta to the slow cooker and stir to combine, ensuring the pasta is well coated with the creamy sauce.
Serve: Garnish with chopped fresh parsley and a sprinkle of red pepper flakes, if desired. Serve hot and enjoy!
