This recipe features tender pieces of chicken threaded onto skewers and brushed with a flavorful yakitori sauce made from soy sauce, mirin, sake, and sugar. Ingredients:
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
Bamboo skewers, soaked in water for 30 minutes
For the Yakitori Sauce:
1/4 cup soy sauce
1/4 cup mirin
2 tablespoons sake
2 tablespoons sugar
1 clove garlic, minced (optional)
1 teaspoon grated ginger (optional)
Directions:
In a small saucepan, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Bring to a simmer over medium heat and cook until the sauce thickens slightly, about 5-7 minutes. Remove from heat and set aside.
Thread the chicken pieces onto the soaked bamboo skewers.
Preheat grill or grill pan over medium-high heat.
Grill the chicken skewers for about 3-4 minutes per side, brushing frequently with the yakitori sauce, until the chicken is cooked through and nicely glazed.
Remove from grill and serve hot with remaining sauce for dipping.
