4 large russet potatoes
1 lb (450 g) ground beef
1 packet taco seasoning (or 30 g)
1 cup (240 ml) shredded cheddar cheese
1 cup (240 ml) salsa
½ cup (120 ml) sour cream
¼ cup chopped green onions
¼ cup diced tomatoes
¼ cup sliced black olives
¼ cup chopped cilantro
1 tbsp olive oil
Salt and pepper to taste
Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare Potatoes: Scrub the russet potatoes clean and pat them dry. Pierce each potato several times with a fork. Rub each potato with olive oil and season with salt and pepper. Place them on a baking sheet and bake for 45 minutes, or until tender.
Cook Ground Beef: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess fat. Add the taco seasoning and water according to the packet instructions. Simmer for 5 minutes, then remove from heat.
