Ingredients
1½ cups rolled oats (gluten‑free if needed)
1 cup raw cashews
½ cup creamy cashew butter
¼ cup pure maple syrup
¼ cup Medjool dates, pitted (about 3–4 dates)
1 tsp vanilla extract
¼ tsp salt
1 cup freeze‑dried strawberries, crushed
Topping (optional):
¼ cup white chocolate chips
1 tsp coconut oil
Extra crushed freeze‑dried strawberries for garnish
Directions
In a food processor, blend oats and raw cashews until they form a coarse flour.
Add pitted dates, cashew butter, maple syrup, vanilla extract, and salt. Process until sticky dough forms.
Transfer mixture to a bowl and stir in crushed freeze‑dried strawberries.
Use a tablespoon or 2‑Tbsp scoop to portion out the dough, rolling each into a bite‑sized ball. If too sticky, dampen hands slightly or chill briefly.
Place bites on a tray and chill in the refrigerator for about 20–30 minutes to firm up.
If using, melt white chocolate chips and coconut oil in short bursts, stirring until smooth. Drizzle over chilled bites and sprinkle with extra crushed strawberries. Return to fridge until the chocolate sets.
Store finished bites in an airtight container: in the fridge for up to 10 days or in the freezer for up to 3 months.
