3–4 lb boneless beef chuck roast
1 packet dry ranch seasoning mix
1 packet dry au jus gravy mix
1 cup low-sodium beef broth
1 medium yellow onion, sliced
4–5 medium potatoes, quartered
4–5 large carrots, peeled and cut into chunks
Salt and pepper, to taste
Prepare the Vegetables: Place the quartered potatoes and chopped carrots in the bottom of the slow cooker.
Season the Roast: Season the chuck roast with salt and pepper on all sides.
Assemble in Slow Cooker: Place the seasoned roast on top of the vegetables in the slow cooker. Scatter the sliced onion over the roast.
Mix the Seasonings: In a small bowl, combine the ranch seasoning mix and au jus gravy mix. Sprinkle this mixture evenly over the roast.
