1 tablespoon olive oil
1 small onion, chopped
3 garlic cloves, minced
1 medium potato, peeled and diced
1 (15 oz) can white beans, drained and rinsed
4 cups vegetable broth
2 cups spinach
½ cup fresh parsley
½ cup fresh basil leaves
2 tablespoons fresh dill
Juice of 1 lemon
Salt and pepper, to taste
Optional: plain yogurt or sour cream, for garnish
In a large pot, heat olive oil over medium heat. Add the chopped onion and cook for 3–4 minutes until soft.
Add garlic and diced potato; sauté for another 2 minutes.
Stir in white beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 15–20 minutes, until potatoes are fork-tender.
Add spinach, parsley, basil, and dill. Cook for another 2–3 minutes, until wilted.
Use an immersion blender (or carefully transfer to a regular blender) to blend the soup until smooth.
Stir in lemon juice and season with salt and pepper to taste.
