Ingredients:
For the Dough:
4½ tablespoons (67.5 g) unsalted butter
2 tablespoons minced garlic
3½ cups + 1 tablespoon (434 g) all-purpose flour
3 tablespoons chopped fresh parsley
1 tablespoon (15 g) granulated sugar
2¼ teaspoons instant yeast
1 teaspoon fine sea salt
1 cup (225 g) whole or 2% milk, warmed to 110°F (43°C)
1 large egg, room temperature
1 beaten egg, for brushing the tops
For the Garlic Butter:
2 tablespoons (28 g) unsalted butter
1 tablespoon minced garlic
1 tablespoon chopped fresh parsley
Flaky sea salt, for finishing
Directions:
Prepare the Garlic Butter: In a small saucepan, melt the butter and sauté the minced garlic until fragrant, about 1–2 minutes. Remove from heat and set aside to cool.
Mix the Dough: In a stand mixer bowl, combine the flour, parsley, sugar, yeast, and salt. Add the warm milk, cooled garlic butter, and egg. Using the dough hook, mix on low speed until a smooth, soft, and slightly tacky dough forms, approximately 10–12 minutes.
Shape the Rolls: Divide the dough into 12 equal portions (approximately 67 grams each). Shape each portion into a smooth ball by cupping your hand around it and rotating. Place the shaped rolls into a buttered 9×13-inch baking pan.
First Rise: Cover the pan with plastic wrap or a clean kitchen towel. Let the dough rise in a warm place until doubled in size, about 1–2 hours.
Preheat the Oven: Preheat your oven to 350°F (180°C).
Prepare for Baking: Brush the tops of the risen rolls with the beaten egg.
Bake: Bake the rolls for 20–30 minutes, or until the tops are golden brown.
Apply Garlic Butter: While the rolls bake, prepare the garlic butter by melting the butter and sautéing the garlic until fragrant. Remove from heat and stir in the chopped parsley.
Finish the Rolls: Once baked, immediately brush the hot rolls with the prepared garlic butter. Sprinkle with flaky sea salt to taste. Serve warm.
