For the Teriyaki Salmon:
4 (6–8 ounce) salmon fillets
1 cup Kona Coast® Island Teriyaki Marinade & Grilling Sauce
For the Mango Salsa:
1 large ripe mango, peeled and finely diced
¼ cup roasted red bell peppers, finely diced
¼ cup sliced tamed jalapeño peppers, finely diced
2 tablespoons finely diced red onion
2 tablespoons minced cilantro
2 tablespoons lime juice
Salt and pepper to taste
For Serving:
Steamed white rice or cauliflower rice
Marinate the Salmon: In a large zip-top bag or reusable storage container, add the salmon fillets and pour in the Kona Coast® Island Teriyaki Marinade & Grilling Sauce. Seal and refrigerate for 30 minutes to marinate.
Prepare the Mango Salsa: In a medium bowl, combine the diced mango, roasted red bell peppers, sliced tamed jalapeño peppers, diced red onion, minced cilantro, lime juice, salt, and pepper. Stir gently to combine. Cover and refrigerate until ready to serve.
Cook the Salmon: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Remove the salmon fillets from the marinade, allowing any excess to drip off. Place the fillets on the prepared baking sheet and brush with some of the remaining marinade. Bake for 12–15 minutes, or until the salmon easily flakes with a fork.
Serve: Place each salmon fillet over a serving of steamed white rice or cauliflower rice. Top with a generous spoonful of mango salsa. Serve immediately and enjoy!
