4 lobster tails (5–6 oz each)
2 tablespoons olive oil
1 tablespoon Cajun seasoning
2 cloves garlic, minced
½ teaspoon smoked paprika
¼ teaspoon salt
¼ teaspoon black pepper
4 tablespoons unsalted butter
1 tablespoon lemon juice
Prepare the Lobster Tails: Using kitchen shears, cut down the center of the lobster tail shell, stopping just before the end. Gently pry open the shell and lift the lobster meat, keeping it attached at the base.
Season the Lobster: Brush the lobster meat with olive oil. Sprinkle Cajun seasoning, smoked paprika, salt, and black pepper evenly over the meat.
Grill the Lobster: Preheat the grill to medium-high heat. Place the lobster tails meat-side down on the grill and cook for 5–6 minutes. Flip the tails over and continue grilling for another 4–5 minutes, or until the meat is opaque and firm to the touch.
Prepare the Garlic Butter: In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Remove from heat and stir in lemon juice.
Serve: Remove the lobster tails from the grill and brush the garlic butter generously over the meat. Serve immediately with additional lemon wedges on the side.
