Shrimp Saganaki is a vibrant Greek dish that brings together succulent shrimp, tangy feta cheese, briny kalamata olives, and a rich tomato sauce, all baked to perfection. This one-pan wonder is bursting with Mediterranean flavors and is perfect for a quick weeknight dinner or an impressive appetizer. The combination of ingredients creates a delightful balance of savory, salty, and slightly spicy notes, making each bite a delightful experience.
Ingredients:
2 lbs extra-large shrimp (U26 or larger), peeled and deveined
2 tablespoons olive oil (divided)
½ teaspoon baking soda
1 teaspoon kosher salt
¼ teaspoon crushed red pepper flakes
1 medium onion, diced
8 cloves garlic, sliced
12 oz cherry tomatoes, halved
1 (28 oz) can diced tomatoes
1 tablespoon honey
1 teaspoon dried oregano
¼ cup white wine (or ouzo for authenticity)
¾ cup crumbled feta cheese
⅓ cup pitted kalamata olives, sliced
Fresh parsley, minced (for garnish)
Lemon wedges (for serving)
Directions:
Brine the Shrimp: In a large bowl, combine the shrimp with 1 tablespoon olive oil, baking soda, kosher salt, and crushed red pepper flakes. Toss to coat and let sit for 10–15 minutes.
Sear the Shrimp: Preheat the broiler. In a large oven-safe skillet, heat the remaining 1 tablespoon olive oil over medium-high heat. Add the shrimp in batches, cooking for 30 seconds per side until just opaque. Remove and set aside.
Prepare the Sauce: In the same skillet, add the diced onion and cook until softened, about 7 minutes. Add the sliced garlic and cook for an additional 1–2 minutes until fragrant.
Add Tomatoes and Seasonings: Stir in the halved cherry tomatoes, canned diced tomatoes (with their juices), honey, and dried oregano. Bring to a simmer and cook for 5–10 minutes to allow the flavors to meld and the sauce to thicken slightly.
Deglaze and Combine: Pour in the white wine, scraping up any browned bits from the skillet. Return the shrimp to the pan, nestling them into the sauce. Top with crumbled feta cheese and sliced kalamata olives.
Broil: Place the skillet under the broiler for 6–8 minutes, or until the shrimp are fully cooked and the feta is melted and slightly browned.
Serve: Garnish with minced fresh parsley and serve with lemon wedges on the side. Pair with warm pita bread, baked orzo, or rice pilaf to soak up the flavorful sauce.
