Ingredients:
6 bone-in, skin-on chicken thighs
Salt and pepper, to taste
2 tablespoons olive oil
1/2 cup fig preserves
1/4 cup balsamic vinegar
2 cloves garlic, minced
1 teaspoon dried thyme or fresh thyme leaves
Directions:
Preheat oven to 400°F (200°C).
Season chicken thighs generously with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Add chicken thighs skin-side down and sear until golden brown, about 5-7 minutes. Flip and cook for another 3 minutes. Remove chicken from skillet and set aside.
In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
Stir in fig preserves and balsamic vinegar, cooking for 2-3 minutes until the glaze thickens slightly.
Return chicken thighs to the skillet, spooning the glaze over the top. Sprinkle thyme over the chicken.
Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Remove from oven and let rest for a few minutes before serving.
