Ingredients:
1 pound cooked shrimp, peeled and deveined
2 large cucumbers, thinly sliced
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint leaves, chopped
2 tablespoons lime juice
1 tablespoon rice vinegar
1 tablespoon fish sauce
1 teaspoon honey
1/2 teaspoon red chili flakes (optional)
Salt and pepper, to taste
Directions:
In a large bowl, combine shrimp, cucumber slices, red onion, cilantro, and mint.
In a small bowl, whisk together lime juice, rice vinegar, fish sauce, honey, red chili flakes, salt, and pepper until well combined.
Pour the dressing over the shrimp and cucumber mixture and toss gently to coat everything evenly.
Refrigerate for at least 15 minutes to allow flavors to meld.
Serve chilled, garnished with extra herbs if desired.
