Ingredients:
2 slices of white bread (or Korean milk bread)
1.5 tablespoons butter (or margarine or olive oil)
1 teaspoon sugar
For the Egg Omelet:
2 eggs
3 oz cabbage, thinly sliced
¼ carrot, julienned
2 green onions, sliced
⅛ teaspoon salt
Pinch of ground black pepper
Condiments and Cheese:
2 teaspoons ketchup
1 tablespoon mayonnaise
2 slices cheddar cheese (optional)
Directions:
Prepare the Vegetables: Thinly slice the cabbage, julienne the carrot, and slice the green onions. If adding ham, slice it into strips. In a bowl, combine the vegetables (and ham, if using) with the eggs. Season with salt and pepper, and mix well.
Toast the Bread: Melt ½ tablespoon of butter in a non-stick frying pan over medium-low heat. Place the bread slices in the pan and toast them until lightly browned on both sides. Remove the bread from the pan and sprinkle ½ teaspoon of sugar on the toasted sides.
Cook the Egg Omelet: In the same pan, melt the remaining 1 tablespoon of butter over medium heat. Pour the egg mixture into the pan, forming a rectangle the size of your bread slices. As the egg cooks, use a spatula to divide it into two squares. Cook until the eggs are set and lightly browned on both sides.
Assemble the Sandwich: Place one slice of the egg omelet on one piece of toasted bread. Top with a slice of cheese, if desired, and spread mayonnaise on top. Place the second slice of egg omelet on top, followed by the second slice of cheese and a drizzle of ketchup. Top with the second slice of toasted bread.
