Ingredients:
1 pound salmon fillet, skin removed and cut into bite-sized pieces
1/2 cup all-purpose flour
2 eggs, beaten
1 cup panko breadcrumbs
Salt and pepper, to taste
Vegetable oil, for frying
For the Bang Bang Sauce:
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1-2 tablespoons sriracha sauce (adjust to taste)
Directions:
Season the salmon pieces with salt and pepper.
Set up a breading station with three bowls: flour, beaten eggs, and panko breadcrumbs.
Coat each salmon piece in flour, then dip into the beaten eggs, and finally coat with panko breadcrumbs.
Heat vegetable oil in a large skillet over medium-high heat. Fry the salmon bites in batches for 2-3 minutes per side, or until golden and cooked through. Drain on paper towels.
In a small bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the bang bang sauce. Adjust the sriracha for your preferred spice level.
Toss the cooked salmon bites in the bang bang sauce or serve the sauce on the side for dipping.
