Ingredients:
1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 can (14 ounces) coconut milk
3 cups chicken broth
1 stalk lemongrass, cut into 2-inch pieces and smashed
3 slices galangal or ginger
4 kaffir lime leaves, torn
2-3 Thai bird’s eye chilies, sliced (adjust to taste)
8 ounces mushrooms, sliced
2 tablespoons fish sauce
1 tablespoon brown sugar
Juice of 1-2 limes
Fresh cilantro, chopped (for garnish)
Optional: green onions, sliced (for garnish)
Directions:
Place chicken, coconut milk, chicken broth, lemongrass, galangal or ginger, kaffir lime leaves, and chilies in the slow cooker. Stir to combine.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is tender and cooked through.
About 30 minutes before serving, add mushrooms, fish sauce, and brown sugar. Stir well.
Remove lemongrass stalks, galangal slices, and kaffir lime leaves before serving.
Stir in fresh lime juice. Adjust seasoning with more fish sauce or lime juice if desired.
Serve hot, garnished with chopped cilantro and green onions if using.
