Ingredients:
1/2 cup unsalted butter
1 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup active sourdough starter (discard or fed)
1 large egg
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup mini marshmallows
1 cup chocolate chunks or chips
1 cup graham cracker crumbs
Directions:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a saucepan, melt butter over medium heat, stirring constantly until it turns golden brown and smells nutty (brown butter). Remove from heat and let cool slightly.
In a large bowl, mix browned butter with granulated sugar and brown sugar until smooth. Add sourdough starter, egg, and vanilla extract; mix well.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients to wet mixture, stirring until combined.
Fold in marshmallows, chocolate chunks, and graham cracker crumbs gently.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10-12 minutes, or until edges are golden but centers are still soft.
Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.
