Salmon Crispy Rice is a delightful fusion dish that combines crispy pan-fried rice squares topped with tender, flavorful salmon. This recipe offers a satisfying contrast of textures—crispy and crunchy rice with moist, savory salmon. Ingredients:
2 cups cooked sushi rice, cooled
1 tablespoon rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
8 ounces fresh salmon fillet, skin removed and sliced into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
2 tablespoons vegetable oil
2 green onions, thinly sliced
1 tablespoon sesame seeds
Optional: spicy mayo or sriracha for serving
Directions:
In a bowl, mix cooked rice with rice vinegar, sugar, and salt. Spread the rice evenly in a greased baking dish and press down firmly. Refrigerate for at least 1 hour to set.
Cut the chilled rice into small squares or rectangles.
Heat vegetable oil in a non-stick skillet over medium-high heat. Fry rice squares for 3-4 minutes on each side or until golden brown and crispy. Remove and set aside.
In another skillet, heat sesame oil over medium heat. Add salmon pieces and soy sauce, cooking for 2-3 minutes until salmon is just cooked but still tender.
Place cooked salmon pieces atop each crispy rice square. Garnish with sliced green onions and sesame seeds.
Serve immediately with optional spicy mayo or sriracha on the side.
