Ingredients:
1 1/2 pounds ground beef
1/2 cup breadcrumbs
1/4 cup milk
1/2 cup shredded cheddar cheese
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1/4 cup BBQ sauce (plus extra for topping)
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon olive oil (for sautéing onion and garlic)
Directions:
Preheat oven to 375°F (190°C). Grease or line a loaf pan with parchment paper.
Heat olive oil in a pan over medium heat. Add chopped onion and garlic, and sauté for 3-4 minutes, until softened. Remove from heat and set aside.
In a large bowl, combine ground beef, breadcrumbs, milk, cheddar cheese, egg, BBQ sauce, sautéed onion and garlic, salt, pepper, and paprika. Mix until well combined.
Transfer the meat mixture into the prepared loaf pan and shape it into a loaf.
Brush the top with additional BBQ sauce for a flavorful glaze.
Bake for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
Let the meatloaf rest for 10 minutes before slicing and serving.
