1 lb Italian sausage links (mild, sweet, or spicy)
1 small green bell pepper, thinly sliced
1 small red bell pepper, thinly sliced
1 small yellow onion, thinly sliced
2 Tbsp cooking white wine (or broth)
1 (14.5 oz) can fire-roasted diced tomatoes
6 oz tomato paste
8 oz tomato sauce
12 oz water
½ tsp Italian seasoning
1 tsp sugar
½ tsp salt, plus additional to taste
⅓ cup heavy cream
Grated Parmesan cheese (for finishing)
Mashed potatoes (amount per preferred serving)
Preheat & start potatoes
Begin boiling potatoes for mash while preparing sausage.
Brown the sausage
Heat a tablespoon of oil in a large skillet over medium-high heat. Cook sausage links until browned on all sides (they’ll finish cooking later). Remove and slice into ¼‑inch pieces.
Cook peppers & onions
Add another teaspoon of oil, then sauté peppers and onions until slightly softened, about 5 minutes.
Deglaze & build sauce
Return sausage to pan and deglaze with white wine. Stir in diced tomatoes, tomato paste, tomato sauce, and water. Add Italian seasoning, sugar, and salt. Bring to a simmer.
Finish with cream
Pour in heavy cream, stirring until the sauce is smooth and rich. Simmer for about 10 minutes.
Mash potatoes
Drain cooked potatoes, mash with butter/milk/cream as desired, and season to taste.
Serve
Spoon creamy sausage and peppers over hot mashed potatoes. Garnish generously with grated Parmesan.
