For the Cajun Chicken:
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon Cajun seasoning

2 cups water
2 cups milk
1 cup quick grits
1/2 teaspoon salt
2 tablespoons unsalted butter
1 cup shredded sharp cheddar cheese
