Ingredients:
For the Brownies:
1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon baking powder
For the Chocolate Mousse:
1 cup heavy whipping cream
6 ounces semi-sweet chocolate, chopped
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Directions:
Preheat oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper.
In a saucepan, melt butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla extract until smooth.
Sift together cocoa powder, flour, salt, and baking powder. Gradually add to the wet mixture, stirring until just combined.
Pour batter into prepared pan and bake for 20-25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Allow to cool completely.
For the mousse, melt the chopped chocolate gently over a double boiler or in the microwave, stirring until smooth. Let cool slightly.
