Ingredients:
1½ cups (380g) ripe mashed bananas (about 3–4 medium bananas)
½ cup (100g) packed light brown sugar
½ cup (100g) granulated sugar
½ cup (110g) unsalted butter, melted
2 large eggs
1 tsp vanilla extract
½ cup (130g) 2% Greek yogurt (or sour cream)
1⅓ cups (180g) all-purpose flour (or 1-to-1 gluten-free baking flour)
1 tsp baking soda
½ tsp salt
¾ cup (140g) mini chocolate chips, plus extra for topping
Directions:
Preheat your oven to 325°F (165°C). Grease and line a 9×5-inch loaf pan with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a separate large bowl, mix the melted butter and sugars until the mixture reaches a paste-like consistency. This may take a minute or two of vigorous whisking.
Add the mashed bananas, eggs, Greek yogurt, and vanilla extract to the butter-sugar mixture. Stir until well combined.
Gradually fold in the dry ingredients until just combined. Be careful not to overmix.
Gently fold in the mini chocolate chips.
Pour the batter into the prepared loaf pan and spread it evenly. Sprinkle additional chocolate chips on top if desired.
