For the Dough:
3/4 cup warm milk (110°F)
1 tablespoon instant yeast
1 tablespoon honey
3 large eggs
3 1/2 – 4 cups all-purpose flour
1 teaspoon salt
6 tablespoons unsalted butter, softened
For the Honey Butter:
6 tablespoons unsalted butter, melted
3 tablespoons honey
Flaky sea salt, for topping (optional)
In a stand mixer bowl, combine warm milk, yeast, and honey. Let sit for 5–10 minutes until foamy.
Add eggs, 3 1/2 cups flour, and salt. Mix using the dough hook until a soft dough forms.
Add butter, 1 tablespoon at a time, until incorporated. Continue mixing for 5–8 minutes. If the dough is too sticky, add more flour 1 tablespoon at a time.
Cover and let rise in a warm place for 1–2 hours or until doubled in size.
Punch down the dough and divide into 12 equal pieces. Roll into balls and place in a greased 9x13-inch baking dish.
Cover and let rise again for 30–45 minutes. Meanwhile, preheat oven to 350°F (175°C).
Bake rolls for 20–25 minutes or until golden brown on top.
Mix melted butter with honey, then brush over warm rolls. Sprinkle with flaky salt if desired. Serve warm.
