For the Dough:
1 cup all-purpose flour
1 cup water
⅓ cup + 1 tablespoon unsalted butter
1 teaspoon salt
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1 large egg
For the Coating:
1 cup granulated sugar
1 tablespoon ground cinnamon
In a saucepan, combine water, butter, salt, and sugar. Bring to a boil over high heat.
Reduce heat and gradually add flour, stirring until the dough comes together. Remove from heat.
Let the dough cool for 4–5 minutes. Then, add the egg and vanilla extract, mixing until smooth.
Transfer the dough into a piping bag fitted with a star tip. Preheat the air fryer to 375°F (190°C).
Lightly spray the air fryer basket with nonstick cooking spray. Pipe bite-sized churro shapes into the basket, ensuring they aren't overcrowded.
Brush churros with melted butter and air fry for 12–15 minutes, or until golden brown.
While churros cook, mix sugar and cinnamon in a shallow bowl.
Once churros are done, immediately toss them in the cinnamon-sugar mixture until well coated.
